Low Carb Creamy Tuscan Chicken


This amazing dish is a great meal to make for date night at home or share (if you choose) with the whole family! I was hesitant at first to try it, but glad I did because the flavor is mind blowing! If you end up with leftovers, it's even better the next day! Let's get cooking!


  1. Place oil in a large 10.5 cast iron skillet over medium heat.

  2. Season chicken with lemon pepper.

  3. Add your chicken to the skillet and cook 4-5 minutes or until there is no more pink. Remove the chicken and set aside.

  4. Add onion to the skillet and cook for 3 minutes to soften.

  5. Add minced garlic and cook for 1-2 more minutes.

  6. Add chicken broth and scrap up any browned bits from the bottom of the skillet with a wooden spoon.

  7. Add your heavy cream and bring to a simmer for 1 minute.

  8. Add your parmesan cheese and continue to stir until melted.

  9. Add sun-dried tomatoes, Italian seasoning, and garlic powder. Stir in spinach and cook until the spinach is wilted.

  10. Remove from the burner. sprinkle mozzarella cheese on the top, and place on the top rack in the oven and turn on the boiler. Leave in the oven for 2-3 minutes or until the cheese has melted and is starting to brown.

  11. Remove from oven and serve warm!

Ingredients:

2 tbsp Avocado or Olive Oil (I use Avocado oil for everything)

2 boneless chicken breasts (cut in cubes or sliced in half)

1 1/2 tsp lemon pepper seasoning

1/2 cup chopped white onion

1 tsp minced garlic

1/3 cup chicken broth

1 cup heavy whipping cream

1/2 cup parmesan cheese, grated

1/2 cup sun-dried tomatoes

1 tsp Italian seasoning

1/4 tsp garlic powder (not garlic salt)

3 cups baby spinach

1/2 cup mozzarella cheese, grated
