Keto Peanut Butter Cookies

Going Keto, I thought that I had to say goodbye to sweets..... I'm here to tell you that you don't have to! I'm a huge peanut butter cookies fan... yes, this may not taste exactly with what we were all brought up with, but it's pretty darn close AND it's only 3 ingredients!

Let's get cooking!

  1. Preheat oven to 350 degrees and line your baking sheet with parchment paper (not wax paper).

  2. Combine all 3 ingredients into a mixing bowl.

  3. Make 13-15 1-inch sized balls and place them on your baking sheet.

  4. Use a fork to press down and flatten the dough a bit. Note: the dough may stick to the fork, but that is normal.

  5. Bake for 12-15 minutes.

The cookies will be soft, but you are welcome to bake them a bit longer to get them crunchy. I would allow them to cool before eating because they do crumble easier than your normal cookie. Enjoy!

1 large egg (cage-free if possible)

1 cup peanut butter (Use any pb you'd like. I use natural)

1/2 cup Erythritol or a keto friendly sweetener of choice
