Keto Muffins (Choice of Filling)
Finding a good dessert recipe on Keto can be tough because it's hard to get the right texture. I came across this muffin recipe the other day and because my family loved them so much, I tried them again but with another filling. The first had sugar free chocolate chips and the other had fresh organic blueberries. These will satisfy your dessert cravings and they are kid approved!! Let's get cooking!
Preheat oven to 400 degrees and line a 12-cup muffin pan with liners.
Spray the inside of the liners with cooking spray. I use 100% avocado oil.
In a medium mixing bowl, combine the flour, baking soda, salt, and sweetener.
Now add in the eggs, greek yogurt, and vanilla extract.
Finally fold in your filling.
Scoop the batter into the muffin cups evenly.
Bake for 20-25 minutes. Mine were around the 25 minute mark.
Let them cool and then enjoy!

2 1/2 cups of almond flour
1 tsp baking soda
1/4 tsp salt
1/2 cup granulated sweetener, I use monk fruit
3 large eggs, cage-free
1 cup plain greek yogurt
2 tsp vanilla extract
1 cup of filling, I used sugar free chocolate chips and organic blueberries
