Keto Crustless Quiche with Bacon and Cheese

Making a quiche has always been on my baking bucket list, but I didn't know where to start! What I didn't know is HOW EASY it was to make one. This recipe has only bacon and cheese, but get creative and use whatever veggies or meat you'd like! Let's get cooking!

  1. Preheat oven to 350 degrees.

  2. Cook 6 thick slices of bacon. You can use your 10.25 inch cast iron skillet or you can use the air fryer. I use the air fryer, setting it at 400 degrees at 12 minutes. It may be less time depending on how thick your bacon is. Once it's done cooking, save at least 1 tbsp of the grease.

  3. In a bowl, crack 6 eggs, then add 4 pieces of the crumbled bacon, 2/3 cup heavy whipping cream, 1 cup of the cheese, and salt/pepper.

  4. Whisk well to incorporate air into the egg mixture to make it light and fluffy.

  5. Grease the cast iron skillet if needed. (taking from the reserved bacon grease)

  6. Pour egg mixture into the cast iron skillet.

  7. Bake for 25 minutes, then remove from oven and sprinkle 1/2 cup of cheese and 2 pieces of crumbled bacon. Note: Baking time may vary depending on your oven. Check the middle with toothpick before removing it from the oven. If it doesn't show anything on the toothpick, then remove it from the oven.

  8. Place in oven on top rack for the last 1-2 minutes until the cheese begins to melt.

Serve warm and enjoy!

6 pieces of bacon, crumbled

1 tbsp bacon grease

6 eggs

1/2 tsp pepper

1/2 tsp salt

1 1/2 cup Colby jack cheese, grated

2/3 cup heavy whipping cream
