Now that I'm getting back into the keto lifestyle, I knew that I needed some new dishes that the whole family would love. Chicken is our go-to meal and broccoli is one of their favorite veggies... so why not bring them together with an amazing sauce! Get ready for a new favorite dish to add to your recipe collection... Let's get cooking!
Melt 1 tbsp butter in a 10.25 oven-safe skillet. (I use a Lodge cast-iron skillet)
Season the cubed chicken with salt & pepper before placing the chicken in the skillet.
Cover the skillet with a lid and simmer on low until the chicken is no longer pink.
Remove the chicken from the skillet and set aside.
Deglaze the pan by pouring 2 tbsp chicken broth into the hot skillet and then scrap the bits off the bottom with a wooden spoon. Leave the bits in the pan as they provide extra flavor!
Place the broccoli in a microwave safe container and follow the package directions to steam. (usually around 5-6 minutes)
While the broccoli is cooking, add 2 tbsp of butter to the skillet along with the minced garlic. Sauté 2 minutes or until fragrant.
Add softened cream cheese, heavy whipping cream, and Italian seasoning to the minced garlic, then stir continuously with a whisk on medium heat until the ingredients are combined.
Reduce to a medium/low heat and allow the sauce to simmer gently boiling until the heavy whipping cream has reduced and thickened. Keep whisking so that it doesn't stick to the bottom of the pan. It will take a few minutes for the sauce to thicken.
Once it has thickened, add the parmesan and pepper jack cheese then continue to stir until the cheeses melt and the sauce is smooth.
Drain steamed broccoli.
Add the chicken and broccoli to the sauce and stir thoroughly.
Sprinkle mozzarella cheese on the skillet dish and then top it with a little basil and I added some bacon.
Place the skillet in the oven on the top rack under the broiler for 1-2 minutes or until the cheese starts to bubble.
Serve warm and enjoy!

2 1/2 - 3 lbs of chicken breasts (cut in cubes)
1/4 tsp basil
1 tsp minced garlic
1 tbsp chicken broth (organic)
1/2 tsp Italian seasoning
1/4 tsp pepper
1/2 tsp salt
3 tbsp butter
1 oz cream cheese
1 cup heavy whipping cream
3/4 cup mozzarella cheese, grated
2/3 cup parmesan cheese, grated
1/4 cup pepper jack cheese, grated (or sliced)
12 ounces steamed broccoli (fresh or frozen)
